The dark-brown to black caviar of the Siberian sturgeon is characterised by its particularly aromatic taste. It is produced as malossol caviar and has a low salt content.

This caviar is produced from the crossbreed of the Siberian and Russian sturgeons. The outer shell of the black-brown to olive-coloured eggs is slightly harder than that of the sterlet sturgeon.
